Ricotta cheese mousse

Ingredients: 300 gr of whipped cream, 300 gr of sugar for ricotta cheese, 800 gr of ewe’s ricotta, honey to taste, 500 gr of berries, 15 gr of gelatine leaves, 50 gr of aromatic liquor, orange and lemon to taste, 150 gr sugar for the sauce, cinnamon to taste, candied orange and lemon zest.

Process: sift the ricotta cheese and add sugar. In a pan warm the liquor with cinnamon and melt gelatine leaves; add whipped cream to ricotta cheese and mix them together, then add gelatine and incorporate it into the mixture. Pour it into stamps and let it rest in the fridge for two hours. In the meantime make a syrup with water, sugar and spices; add berries and blend it with a blender . put the mousse on a plate decorated with the sauce and add some honey and orange and lemon zest.
